Moving From Alcohol Fermentation to Vinegar Fermentation
March 12, 2022 Day 1 of vinegar fermentation

Taste test / notes
- Grape – tasted like a wine vinegar (I wonder why)
- Mango – light and tastes tropically
- Plum – Good. Couldn’t really feel a specific flavour profile
- Blueberry – my favourite. Can definitely taste the berries and would make a great dressing or shrub
- Currant – tasty. Not quite sure if it still brings out the flavour profile of currants, but it is interesting.
- Cranberry – got mould on it. So we tossed it. I suspect it hadn’t properly fermented in phase 1 (alcohol fermentation stage) Too bad. We’ll try again.
Cranberry vinegar fail…
Celebrating the Success
We got 17 5ox bottles (extra stock we had from S’s hot sauce endeavours) and 1 500ml bottle (recycled from an old soy sauce bottle).
